Commis Chef - Full Time

The Crocodile Hunter Lodge and the Warrior Restaurant have been designed to reconnect guests with nature, and is home to beautiful native wildlife, with black cockatoos and kangaroos visiting most days. The Warrior restaurant overlooks a beautiful home for our resident emus, kangaroos and koalas.
The Commis Chef will be responsible for preparing meal ingredients required, whilst working alongside the Chef De Parties within various kitchen responsibilities.
Responsibilities of the Commis Chef include; preparing ingredients, seasoning meats, inventory, stock rotation and delivery receivings, maintaining cleanliness of the kitchen space and ensuring proper presentation of food as directed by the Chef De Parties.
We are looking for reliable, energetic and passionate people, with the ability to work alongside a team of experienced Chefs!
Duties Include –
- Measuring and preparing meal ingredients accurately in preparation for the service periods.
- Preparing meals by washing, peeling and chopping fruits, vegetables and seasoning meats when required.
- Preparing salads and sauces for meals as directed and when required.
- Receiving deliveries and confirming that all ordered items have been received in proper quality.
- Regular inventory tracking of restaurant supplies and notification to the Kitchen management team when stock is low.
- Cleaning and ensuring all workstations are organised and properly sanitised.
- Ensuring that smooth operations of all kitchen areas and stations are met, by ensuring equipment is ready, areas are clean and by assisting the team wherever possible.
Essential Criteria –
- Chef Qualification (e.g. Cert III in Commercial Cookery).
- Experience in all facets of kitchen operations, including stock control, labour analysis, roster creation, staff management and an extensive understanding of HACCP management.
- Ability to work in high pressure and fast paced situations.
- Full availability, including weekends, evenings, public holidays and school holidays.
- Responsible Service of Alcohol (RSA).
